Anthocyanins are believed secondary metabolites as a food additive with E number E163; they’re approved for use as a food additive in the EU, Australia, New Zealand and Lebanon.

Although anthocyanins are considered powerful antioxidants their super antioxidant property is unlikely to be conserved if the plant is consumed.

As approved by the L. Pauling Institute and European Food Safety Authority, dietary anthocyanins along with other flavonoids have little if any direct antioxidant food value following digestion.

Unlike controlled lab testing (tube) conditions, the fate of anthocyanins in vivo shows they’re poorly conserved (significantly less than 4.88%), with the majority of what’s absorbed existing as chemically modified metabolites which are rapidly excreted.

The upsurge in antioxidant capacity of blood seen following the usage of anthocyanin-rich foods might not be caused directly by the anthocyanins, but rather may derive from increased the crystals levels produced from metabolism of flavonoids.
