Garlic (Allium sativum, чеснок, الثوم) is a perennial herbaceous bulbous plant of the onion family of the genus Allium in the family Amaryllidaceae (Alliaceae). It is a powerful aromatic medicinal and culinary plant that has been cultivated for thousands of years.

Garlic is an allium and another feeding source just like onion. Garlic and onion share many nutritional similarities.

Garlic is high in many mineral salts and vitamins such as selenium, manganese, vitamin C, thiamine B6 as well as it is high in flavonoids (antioxidants).

Sulfide allicin is the main organosulfur compound obtained from garlic. Garlic produces allicin to protect itself from insects. However, sulfide allicin is responsible for many of garlic’s health benefits.

Sort, rinse, and soak 1 pound of beans (pinto beans, white Brazilian beans, red Russian beans, thick American beans,) overnight in bicarbonated water or by a quicker method (boiling and then letting rest for 1 hour in boiled water with bicarbonate).

Drain off the soak water, and cover the cooked beans with several inches of water.

Add 5-7 peeled and coarsely chopped cloves of organic garlic. boil it on a low level heat, and simmer for 2-3 hours, until beans are very tender.
