Lean beef  (говядина постная, لحم البقر الاحمر الصافي الخالي من الدهون) has not been praised before, nor should ever be considered a traditional superfood, but due to its nutritional profile its status as a super-food was altered from 0 to 1 in 2009, and since then, lean beef is considered a superfood.

Though many people avoid red meat due to concerns about the dangers of eating red meat and false beliefs that eating red meat causes heart disease by raising cholesterol levels; However, lean beef (red meat) is an excellent source of several B vitamins such as thiamin, niacin, riboflavin, cobalamin, folate and B6.

Vitamins B6 and B12 are difficult to find in plant sources.

What are the health benefits of eating red meat?

Eating lean beef daily can reduce the risk of heart disease as well as it also aids in:

  1. Protein synthesis, especially albumins.
  2. It’s vital for the normal functioning of the brain and nervous system.
  3. It is a very good source of iron; it plays an important role in the formation of the Heme (protoporphyrin combines with iron to form heme), which, in turn, gives hemoglobin the ability to bind oxygen because of the presence of iron atom and contributes to the red color found in muscles and blood.
  4. A great source of zinc that promotes the growth of healthy muscles.
  5. Reinforcing the immune system and CNS (brain)
  6. A great source of selenium that promote thyroid health.
  7. It assists other B vitamins to function normally.

So what is vitamin B12?!

Cobalamin or Vitamin B12 is named the “red vitamin,” due to its red crystalline color. B12 is unique in that it is the only vitamin that contains cobalt, an essential mineral necessary for health. B12 is unique also in that it is required in pretty few amounts, Only ~4 micrograms are needed per day; however, much higher levels, up to 1 mg, are often used therapeutically for the treatment of various diseases.

Cobalamin is a molecular complex. Besides cobalt, it also contains:

  • Carbon
  • Oxygen
  • Phosphorus
  • Nitrogen

 

Cobalamin is stable to heat, slightly sensitive to UV (light), and strongly destroyed by oxidizing / reducing agents or by some heavy metals.

Vitamin B12 is a water-soluble vitamin that is stable to heat. The main cobalamins in humans are methylcobalamin, hydroxocobalamin and adenosylcobalamin.

Methylcobalamin and adenosylcobalamin are bioactive coenzyme forms of B12 that provide great benefit to the body.

Cyanocobalamin is widely used medically, because of its stability and availability, and because it is transformed into various bioactive factors in the body.

Cobalamin is produced commercially from bacterial fermentation.

Vitamin B12 is necessary for the formation of:

  • Blood corpuscles
  • Nerve sheaths

 

Cobalamin is highly involved in protein, carbohydrate and fat metabolism.

Vitamin B12 is required for the synthesis of folate polyglutamates, which, in turn is required for the formation of nerve tissue and in the regeneration of folic acid during red blood cell formation (erythropoiesis).

Vitamin B12 is better absorbed with calcium (Ca), within meals and during pregnancy.

Absorption of Cobalamin decreases with:

  • Age
  • Deficiencies of calcium, vitamin B6, and Fe.

 

After absorption, vitamin B12 is bound to serum proteins (globulins) and is transported through the bloodstream to tissues.

Cobalamin is needed in:

  • Releases energy
  • The synthesis of RBC “red blood cells”
  • It stimulates appetite
  • Promotes growth

 

It is often used with aged people to give an energy boost & assist in preventing mental deterioration.

This vitamin is also used by athletes for the metabolism of fats and carbohydrates
