Blue-cheese (голубые сыры, الجبنة الزرقاء) is a fancy super-food with a rotten-cheese appearance, and when we talk about this kind of food people’s choice usually splits vertically that you either like it or hate it.

According to the US Cheese Society, the blueish veining (extending bluish veins running through its interior) is created when the mold type “penicillium roqueforti” is added and exposed to air during the cheesemaking  process.

This mold provides the flavor to cheese ranging from fairly mild to pungent taste.

In fact this assertiveness do drive some people away but blue cheese lovers prefer  to crumble it into their vegetarian salads or by just eating it on a cheese plate.

How to make blue-cheese?

Cheese-makers introduce penicillium roqueforti spores into the vat of milk. “The blueish/greenish lines that you see are exactly where the cheese has been needled so that the mold gets oxygen.”

The curd of cheese is then cut and drained off. blue-cheese varieties are constantly turned so the heavy weight of the curds expels the moisture, and it’s known that the curd must remain loosely packed keeping space for the blue mold to grow.

The bluish vein like cords in cheese start out light green but turns darker as the cheese matures. The mold spreads and grows throughout the blue-cheese gaining it the flavor. The older the deeper and more intense the flavor gets.

Blue-cheese is definitely not shy when it comes to both factors:

  • Aroma
  • Flavor

 

So people must use it with care especially when the supposed guests are not familiar with this type of cheese yet.

Aside from serving  in a salad, you can prepare a cheese sauce with it, or just melt it on top of steak. it also can be crumbled onto sandwich fillings.

Notable examples of the blue-cheese family includes Gorgonzola, blue Cheshire, blue brie, ,French Roquefort and the blue brie.
